5 Ingredient Chocolate Truffles and 5 Freakishly Inspiring Quotes

I am a quote whore. That might seem extreme but I seriously am. A quote can move me so much that I encorporate it into daily  conversations as if they were my own words. But I always wanna give credit where credit is due hence this list. Few things can impact me so simply then a solid quote. Some rule my life, some help me get a point across and others are mantras for how I approach each day. I have hundreds of them saved… on my desk top, on sticky notes, in my head. Below are 5 quotes I am L-O-V-I-N-G right now. Take one for yourself if one makes you feel something special. I truly hope these quotes inspire you as much as they do me. AND since this is a food blog, lol, below is a recipe for some insanely good vegan chocolate truffles I made for my boyfriend that made him go WOW and that made my heart so full.

This is an Ayurvedic proverb. It sums up my entire wellness philosophy in two sentances. I couldn’t be more laconic or eloquent even if I tried.

Tony Robbins dropping some major truth. As an entreprenuer and total type A, I am all about accomplishment but I regularly repeat this to myself to remind me to practice gratitude, generosity and celebrate each day. And to keep me in check… life isn’t all about money, followers or “likes.”

 

“A person’s success in life can usually be measured by the number of uncomfortable conversations he or she is willing to have.”

This quote is often the push I need to speak up. Thank you Tim Ferris for this little nugget of inspo. I reuse it all the time.

This is from one of my all time favorite books Outrageous Openness by Tosha Silver. If you are at all feeling lost, confused or directionless in your life (which is how I felt just last year) this book is for you. It changed my life.

I am by no means trying to get political on you but this quote from Michelle Obama is really a great way to deal with any type of adversity with other people. Although I am not perfect and can get crazy in the moment, if someone upsets me I’ll do my best take a step back, inhale a couple big breaths and repeat this as a mantra before responding.

Easy 5 Ingredient Chocolate Truffles

Ingredients

  • 8
    medjool dates, pitted
  • 3 Teaspoons
    melted coconut oil
  • 2 Teaspoons
    chia seeds
  • 2 Tablespoons
    cocoa powder + more to roll truffles in
  • 2 Teaspoons
    shredded coconut

Instructions

  1. Add all ingredients into a high speed blender like Vitamix or food processor on high until a creamy and blended together. It will form into a ball of dough. Then using a spoon, scoop out into 9 one inch balls. Roll around in cocoa powder. Keep in an air tight container in the fridge for up to a week.

    Optional: Garnish with dark chocolate hazelnut spread from Nutiva, chia seeds and granola.

  • i really really like “success without fulfillment is the ultimate failure.” it’s applicable all the time, but it seems especially so now that i’m inching relentlessly towards graduating college. also really like the michelle obama quote; not sure if the current political climate has influenced this, but i’ve been deriving some perverse pleasure in karma, and her quote is an overall good reminder that even if someone else isn’t being a great person, i should be my best self instead of trying to match their low.
