I very distinctly remember the first time I had avocado and mango together. It was the beginning of 2011 and I decided to sign up for Ok Cupid (this is one step away from the “we only here to hook up” status of Tinder, which I am proud to say I have never used). I mean no offense if you have, so feel free to tell me I have it wrong. Anyways. At this time I was fresh out of a break up and determined to fall in love again. I met this guy who was hilarious. Literally laughed at my computer for weeks while we chatted using Cupids messaging service.
At the time, I was traveling in New York and Paris for work for Fashion (way longer than a) Week, and was less interested than I should be in going to industry events after the work day was completed, so I spent my time ok OK Cupid talking to guys. Not proud of this choice, but its the truth. Have compassion, I was dealing with a broken heart that even designer shoes could not fix. I know, crazy.
I couldn’t wait to meet this dude who made me laugh so hard Cafe Au Lait came out my nose. Eventually we went out for pasta and had a jolly old time. After a few more fun adventures in Los Angeles…. he invited me over for dinner at his friends house. Guess what me made?
AVOCADO and MANGO Guacamole.
Hello…life changed. I never thought of using those two ingredients together before but lets just say I use them together all the time now. For example — this salad.
What you need:
3 cups corn, raw or fire roasted over a flame
1 1/2 cups mango, from one medium mango, cubed
1 cup red pepper, chopped
3/4 cup cucumber, chopped
1/4 cup onion, chopped
1/4 cup fresh cilantro, chopped
1 tbsp fresh mint, chopped
1 garlic clove, chopped
1 avocado, cubed
2 limes, juiced, 1 zest
Pink salt and pepper, to taste
Prepare all ingredients as stated above. I fire roast the corn over the open flame on my gas stove top, or you can do this over the flame of a grill but feel free to leave the corn raw if you prefer. Combine all ingredients in a bowl and mix well. Garnish with fresh cilantro. If you eat cheese- this is great with feta or cotija.
