HAPPY Cinco de Mayo! Lets Celebrate with one of the best things ever: Guacamole!
There are so many different ways to make it, and none of them are wrong. As far as I am concerned, anything with mashed avocado is a good idea. and when you insert salty, crunchy chips its heaven on earth. This is the first time I have ever made guacamole with pineapple and jalapeno, and based on how quickyly I ate the entire bowl by myself, it wont be last. Yeah, I know. How indulgent was that. It was tasty! And to be honest, it was sort of unplanned. I had a little bit of pineapple left in the fridge when I reached in to grab the cilantro and thought it would be the perfect thing to balance the bite of a little extra jalapeno. Don’t you just love kitchen serendipty?
There are many perks to living in southern California and $0.69 avocados is one of them. Yes, my friends I paid sixty nine cents per avocado. Insane. I am taking that as a sign from the universe to eat lots and lots of avocados.
This guacamole is sweet, spicy, creamy, decadent, rich.
Make. This. Now.
In a medium bowl, mash the avocados with a fork. Then add in the lime juice and red onion, and continue to mix with a fork. Add the pineapple, jalapeno, garlic and cilantro and mix well. Add pink salt to taste. Serve immediately with organic corn chips. NOM!
