Cut the caulifower florets into 1 inch pieces, removing and discarding the core. Add a couple pieces of the florets into the food processor or vitamix and pulse in 1 second intervals until it reaches small pieces that resemble cous cous or rice. It is normal to have a piece here or there that is larger after you pulse so simply put that aside and repulse with the next batch. It took be about 5 rounds before I pulsed the whole head. I ended up with about 4-5 cups of cauliflower rice.
Then prepare the ingredients as stated above, chopping the onion, garlic and cilantro. Over medium heat, heat 1 tbsp of oil and saute the onion for 2 minutes, then adding the garlic and continue to cook until translucent and fragrant. About 5 minutes total. Mix in the cauliflower rice, and cilantro and cook for another 2-3 min, stirring constantly.
add pink salt and pepper to taste, transfer to a serving dish, garnish with cilantro and serve.
