Watermelon and Vegan Feta Salad

  • 2 Cups
    arugula, lightly packed
  • 2
    kale stalks, leaves trimmed
  • 1 Tablespoon
    dijon mustard
  • 1 Tablespoon
    maple syrup
  • 1 Teaspoon
    lemon juice
  • pink salt and pepper, to taste
  • 1 Cup
    watermelon, cubed
  • 1/2 Cup
    heirloom tomatoes, cut into small pieces
  • 1
    persian cucumer, sliced
  • 1/4 Cup
    mint leaves, chopped
  • 1/4-1/2 Cup
    vegan feta, or cheese of choice
  • 1-2 Tablespoon
    roasted sunflower seeds


  1. Add arugula and kale leaves to a large bowl

  2. in a small bowl, whisk together to mustard, maple, lemon juice, salt and pepper until well combined. Pour dressing onto the leaves and mix to coat well.

  3. Prepare all ingredients as stated above. Add to the salad and toss to mix well. Serve immediately.
