Superfood Energy Bars- Gluten Free, Raw, Paleo

Processed with VSCOcam with t1 preset

Portability of food is a very attractive attribute in my opinion, so these superfood energy bars are freakin sexy if you ask me. I love having healthy snacks that I can grab quickly since I am always on the go. Not only are these bars extremely healthy for you but they are so easy to make and taste great! It was a typical Tuesday at my apartment, the man and I were in the kitchen whipping up goodies galore and we hapened to make these antioxidant loaded bad boys! Feel free to make them for yourself and bring them on your next adventure!

Superfood Energy Bars 1

SuperFood Energy Bars
Makes 12-15 servings
What you need:

  • 1 cup walnuts
  • 1/3 cup chia seeds
  • 1/3 cup ground flax seeds
  • 1/3 cup hemp seeds
  • 3/4 cup dried cranberries
  • 3/4 cup pumpkin seeds
  • ¼ cup dried blueberries
  • 1 cup dates + 3 Medjool dates
  • 2 Tbsp melted coconut oil (plus more if needed, 1 tsp at a time)
  • ¼ tsp cinnamon

Throw the dry ingredients (keep a little bit of each ingredient to add in a second) in your food processor, then add the dates, dried cranberries and dried blueberries and process until everything it starts to stick together. If too dry, add more dates or coconut oil. Put in the remaining dry ingredients you left out and mix in with your hands. Press into a lined pan and set in the fridge for an hour or more. Cut into bars and store for up to one week.

xoxox, Enjoy
