No matter how many times I use jackfruit in the place of meat I am still bewildered by it. This stuff seriously looks like it and the texture resembles it too. Combine that with the fact that it takes the flavor of everything you add to it and you could confuse a butcher into thinking they are eating the real thing. Maybe. These tacos are inspired by street tacos I’ve had in the somewhat distant past while visitng Mexico for my 18 birthday with friends. To give you an idea of the experience it was your typical “spring break” trip south of the border. The bikinis were small, the drinks were cheap and the tacos were cheaper but not short on flavor. The memories of walking up to street vendors late at night is thick and vivid, as if I had only just done it the night before. Making these tacos requires a little more effort then drunkingly ordering from a local who is so over annoying young girls but not much so they have earned their place in my summer taco night rotation.

You guys?! These tacos are da bomb. Honestly, I impressed myself with these. As someone who is not a natural born chef, it really takes something from me to make a recipe that has multiple elements. I dont have loads of patience and I’ve learned that good food takes time. But if I can do it, so can you. This week is Cinco de Mayo, and to celebrate, I will be sharing 3 awesome Mexican recipes, starting with these tacos.

Tacos are easily one of my most favorite things to eat and living in Southern California there is absolutely no shortage of awesome ones around but after making  this sandwich last week, I really wanted to get in the kitchen and try my hand at some jackfruit tacos. The mango bbq sauce sounded like a good idea and a bit of an American twist on the classic Mexican fare. Its sweet, spicy, salty and mmm, finger lickin good. The recipe here makes about two cups and you only need 1/2 cup per 20oz can of jackfruit so store the rest in an air tight container for up to two weeks in the fridge. You could use it on burgers, fries, sandwiches, tofu nuggets or anything that calls for bbq sauce. Okay, lets make some Tacos!

Herbed Jackfruit Salad Sandwhich- A Vegan Spin on Classic Chicken or Tuna Salad

Confession- I am jackfruit convert. As I was making this recipe I couldnt stop thinking of all the different ways it could be used. This stuff is amazingly versatile and not processed. Similarly to tofu, jackfruit has a very mild flavor so it picks up the flavor of whatever you add to it extremely well, making it an awesome meat substitute for vegans and plant eaters alike. Granted, it isn’t high in protein like meat, but you can find your protein elsewhere.
