About a year ago my mother was diagnoised with high blood pressure. SCARY. It was a cause for concern for everyone in the family because according to the CDC (Center for Disease Control and Prevention), high blood pressure can be the primary cause if not a contributing factor to more than 1,000 American deaths EVERY DAY! It increases the risk for more lethal health conditions like heart attack, stroke and chronic heart failure. Although several members of my family work in health care as nurses, it was important to my mom that she give it everything she had to lower it through diet and lifestyle before resorting to perscription drugs. I am a salad girl, or more accurately, a girl who likes to eat meals out of a bowl. I find it so comforting and easy to layer ingredients on top of each other, curl up on the couch and slowly enjoy my food bite by bite. Although, that is not always how it goes, cause life is full speed and I find myself eating standing up over the counter while checking emails, returning calls, or driving (ugh so unsafe I know). Making a conserted effort to not eat like this is always a goal of mine, one I am more likely to accomplish on the weekends.

Salads are my go-to whenever I want to use what is in season or what is left in your fridge. Its also a great opportunity to experiement with different flavor combinations and see if things can go well together. While making the pesto for this salad, we didn’t have enough mint to make enough for the whole salad so I thought lets just toss in some of the basil and cilantro we have and see how it goes. Sure enough it worked out well and tasted great so, volia! A really lovely recipe that will help you use up all those extra herbs in your fridge so they don’t go to waste. I know I’ve talked a little bit before about how much I dislike letting things go to waste. So, if you find yourself with some “about to go bad” herbs, make this pesto and then put it on whatever you are in the mood for that day. Some pairings include toast, sandwiches, pasta, risotto, or this salad, obviously.

Shaved Asparagus Salad with Citrus, Edamame and Pine Nuts

I really love how seasonal this salad is. It makes me all excited about spring and shaved asparagus is a fun twist on the way I normally eat them– whole spears, sauteed or roasted. Although it is considered normal, I can’t get over how weird it is that asparagus makes your pee smell funny. I mean, like does anything else have this pheonomenan except maybe drinking too much coffee? Rhetorical. Basically, our bodies convert asparagusic acid into sulfur-containing chemicals that smell and pass through the body naturally when we pee. This might be enough to keep some poople at bay, but alas, I love asparagus and will eat them regardless.
