oh hello babes! Can you believe that 2018 is just a couple days away? like woah.

Anyways, I’ve really been loving turmeric recently. Anything anti-inflammatory but specifcally turmeric. Not only do I like the way it tastes and love the color but it has loads of health benefits.

Turmeric contains a compound known as curcumin that has powerful anti-inflammatory properties.  Although acute short term inflammation helps the body fight off invaders, long term chronic inflammation does not. It can wreak some serious havoc on us human beings.

Easy Spiced Lentil Soup

Well if it isn’t just a big ol’ bowl of cozy right up in there.

I can basically see my boyfriends eyes roll and hear him tell me I am such a weirdo for writing that sentence above. But ya know what? I don’t care. This whole writing in the way that I talk thing has made writing so much more fun. And one of my closest girlfriends called me the other day and told me that she is loving my blog lately because she can “literally hear me” through my writing.

I think that’s pretty dope. Because it was realllllly intentional.

I was listening to a Skinny Confidential podcast and it was all about finding your voice and how important that is for building community in the online space. Lauryn said that all that really means is to write the way you talk.

Since then I have made a conscious effort to not sound so perfect and put together…. to just write the way I speak in person. That’s why there are so many curse words now. Sorry mom.

But what is easier for me then to sling the F word around is making soup. That is part of the appeal, atleast for me any way.

Generally, all that is required is some chopping and then tossing everything in a pot. Other meals have complex steps or cooking techniques but not soup. Soup is simple, straight to the point. Sometimes thats all we need from our food.

I served this along side some quinoa, kale and micro greens. It kept well in the fridge for a week and would freeze well if you wanted to bulk cook it and save some for later.

simple spiced lentil soup 

INGREDIENTS:

¼ cup avocado or coconut oil

1 medium onion, chopped

2 carrots, chopped

4-5 garlic cloves, minced

2 tsp ground cumin

1 1/2 tsp curry powder

½ tsp fresh thyme

1 28-ounces can tomatoes

1 cup brown lentils

6 cups vegetable broth

pink salt

Pinch red pepper flakes

black pepper

1 1/2 cup chopped kale

Juice of 1 lemon, to taste optional

3-5 drops stevia optional

DIRECTIONS:

Warm the coconut oil in a large pot over medium heat.

Once the oil is hot add the onion and carrot and cook until the onion has softened, about 5 mins.

Add the garlic, cumin, curry powder and thyme.

Stir for 30 secs. Pour in the tomatoes and cook for a few more minutes, stirring often.

Pour in the lentils and broth. Add salt and red pepper flakes and black pepper. bring to a boil, reduce heat to a simmer. Cook for 30 minutes.

Transfer 2 cups of the soup to a blender. Blend and then pour back in soup. Add kale. Add lemon juice and stevia if using. Taste and adjust seasonings. boom.

15 Minute Marinara Sauce

Hi Franzzz!

Today I have a super quick and fun recipe for you.

Its a 15 minute marinara sauce for a lazy fancy meal and it is right up this girls alley. I just don’t always have the time or desire to spend all day in the kitchen whipping up something or letting a sauce simmer.

Not only has it been really warm in LA the past two weeks and leaving the stove on makes the house hotter, I have been consciously aware of the utlities bills. Letting a sauce simmer on the stove all afternoon would just rack up a higher gas bill and well I am just not made of money. So this quick sauce saves time and dollar dollar bills ya’ll.

The Best 10 Minute Lentil Salad. Like Ever.

Lentils are kind of underrated, no?

They sort of get a bad rap for not being delicious. I don’t know many people that are like, I looooove lentils, but I am starting to really get a soft spot for them.

I mean, that curried lentil soup I made last week on Instagram Live was so good I seriously made it 5 times in about 8 days and I made it for the dinner I co-hosted with Kitchen Table App, too. 

High in magnesium and folate, these guys are heart healthy supporting blood flow, moving oxygen and nutrients throughout the body. Folate is super important for pregnant ladies because it supports brain development in babies. And they are really high in protien for a plant based food and high in fiber so they are great for digestion, energy, balanced blood sugar and support a healthy weight. They help keep cravings for sugar low as well.

Plus they are freaking cheap. Like dirt cheap.

If you are on a budget skip the pasta and opt for the immensely healthier option of lentils. Just an idea.

Life Changing Butternut Squash Pasta

INSERT Life changing bowl of comforting pasta. That might seem like an overstatement but this really was life changing and comfort food on crack.

Believe it or not, I had never had butternut squash pasta before even though I have seen it over the blogsphere many times. I was genuinely blown away with the complexity of flavor but simplicity of the cooking process. No matter your skill level you can make this pasta dish and WOW your dinner guests. I promise.

Think sweet butternut squash, creamy coconut milk/cream, herbecious basil, red pepper for some bite, kale for some texture all over gluten free pasta noods. I mean….

Another bonus is that it kept really well in the fridge over night so it would be a great potluck item for any fall dinner parties or friendsgivings you got coming up this holiday season. I made it for #nationalboyfriendsday for my man and my roomie. Both of them agreed it was really really good.

The Best (and easiest) Kale and White Bean Soup

Its finally fall, at least according to my calendar. Its still like 90 in LA but whatever SOUP is on my MIND. This is one of my favorite and I’ve been making it for years. Its easy, healthy and delicious. Basically everything we want in soups, right?

The star of the show, at least in my opinion, is the kale. Its a hearty green packed with nutrition. Our bodies LOVE leafy green carbohydrates like kale. They feed our gut bacteria, fight oxidative stress, provide phytonutrients and antioxidants that our body needs to thrive.

Kale also has been scientifically shown to help prevent cancer, protect from free radical damage, support cardiovascular health, is great for pregnant women, our brain and blood pressure.
